Pinot gris for the Exiled comes from the St Helena clone of Pinot gris and is grown on both Waiheke and Ponui Islands. The wines are chilled to below zero to stop the fermentation before blending, the blend is held at low temperatures in the cellar until bottling to retain as much of the natural carbon dioxide as possible.

The Pinot Gris is a pale straw colour with a hint of gold. A fragrant wine with jasmine, almond and pear notes. Palate is full-bodied wine with spice, pear, fig and honeysuckle favours. The grapes are gently pressed, and the juice settled prior to fermentation in stainless steel tanks at cool temperatures to retain the bright, varietal aromatics, with a small portion in old French oak for added weight and texture. A pale straw colour in the glass, a nose of bright florals with apple and pear notes underscored with a fresh herbal seam with compliments of spice. The palate is just off dry with ripe fruit flavours, rich texture, and fresh acidity. Match with white meat, veal, Asian food, and cheeses.
